Batch Cooking

I’m always on the lookout to streamline our household from our daily routine to what we eat. I admit we haven’t been eating very healthy lately. I’ve used the “newborn” excuse for way too long so I created a plan.

Earlier this month I decided to take one day this month to cook all meals for the month of August. It sounds a bit daunting and I’ll be honest it wasn’t too easy but once you’re finished you feel like you’ve climbed Mount Everest. It takes a bit of planning to get it done but worth it. You have to do a lot of shopping, a night before preparation of chopping veggies and then an entire day of cooking. Really, it took me about 6 hours of cooking, 1 hour of chopping and 2 hours grocery shopping. So a total of 9 hours.

I decided to tackle Once A Month Mom’s Dairy/Gluten free menu. It’s full of delicious recipes of muffins for breakfast, fritters and burgers for lunch and lots of food for the grill for dinner. She bases the meals around the season so you can load up on items that are on sale. Awesome! Of course I tasted as I cooked and right now my favorite are the zucchini fritters. I mean anything fried is bound to be delicious, right? Plus I love how she incorporates lots of veggies into the meals.

I even caught the organizing fever and created a family binder for the household and prepackaged snacks for Kendall. No more asking mama what’s there to snack on. She can go to her “drawer” and pull out a healthy pre-portioned snack. Right now her favorite is the go-go applesauce. I must really love that kid because I HATE applesauce. Apple juice too. But put an apple pie in front of me and move back quickly or an arm might be eaten. ;]
