I’m always on the lookout to take traditional foods and make it allergen-free for Kendall. Recently I came across this recipe for vegan goldfish crackers and after successfully making them I thought, I bet they would be great as an alternative to peanut butter cheese cracker sandwiches. So instead of making goldfish, I use a small round circle cutter to create the crackers and spread soy nut butter between them and voila! A perfect little snack!
